Our Story

Tim Robards and Shun Eto partnered to create a wine with one goal in mind - to take on the French and craft one of the best Rosés in Australia. And they’re winning.

The day Tim’s daughter, Elle, was born, he was running high on oxytocin and minimal sleep. Inspired to create something lasting in her name, his passion for wine and its ability to bring people together in celebration subconsciously sparked the idea for ‘Elle Rosé.’ Tim mentioned his idea to his good mate, sommelier Shun Eto, and—long story short—they made a rosé together.

Creating one of the best Provence-style rosés in the country required a great team. Tim and Shun collaborated with the winemaking talents of Alex McKay and Emma Shaw to bring their vision to life. “Alex and Emma were amazing at interpreting my lack of fancy wine language, but I know what I like to drink. They were able to translate that perfectly, balancing the science with the art and passion of winemaking,” says Tim Robards.

“The 2023 vintage turned out amazing, and Icebergs restaurant in Bondi was the first to take it up and support it—which was incredible, maybe beginner’s luck. Then, we refined it further with benchmarking sessions, tasting against our favorite French wines for the 2024 vintage, which turned out even better. We’re very excited about it,” Tim adds.

“We knew it was a great wine, but receiving the accolade of a gold medal truly validates the belief we had in our Elle Rosé—especially when it was blind-tasted against 100 rosés from Australia and New Zealand,” says Shun Eto.
